Goat Cheese Pasta

Recipe: Goat Cheese Pasta 

From Food Network Kitchen 

Serves 5 People 

Prep Time: 25 minutes

Total Time: 25 minutes 

Ingredients: 

1 box of farfalle pasta
3 tablespoons olive oil
6oz of goat cheese at room temperature 
1/2 cup of half and half
1 teaspoon garlic
3 tablespoons parsley
3 tablespoons lemon juice
Grated percorino romano cheese
Salt and pepper to taste 

Directions: 

  1. Cook pasta according to the package and  your liking. Reserve 1 cup of the pasta water. 
  2. While the pasta is cooking, add olive oil to large saucepan and  heat over medium heat. Add the garlic and  saute for about two minutes. 
  3. Add the half and  half and  stir in the goat cheese until soft. Season with salt and pepper. 
  4. Add lemon juice and  the reserved pasta water until all combined. Add in the parsley (I do a little oregano too). 
  5. Transfer the drained pasta into the saucepan and  cook until the sauce starts to thicken about 2 minutes. 
  6. Grate the pecorino romano and  serve!
