Recipe: Feta Stuffed Meatballs
Serves: Makes 12-16
Prep Time: 10 minutes
Total Time: 35 minutes
Oven Temperature 375 degrees F
Ingredients:
1lb ground turkey
2 tablespoons lemon juice
2 teaspoons dried oregano
1 tablespoon minced garlic
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 cup vegetable oil
2/3 cup feta cheese cut into small cubes
3/4 cup plain yogurt
1/4 teaspoon salt
1 teaspoon lemon juice
Directions:
- If you are baking preheat oven to 375 degrees. In a large bowl mix together the first 7 ingredients for the meatballs. Use your hands to combine
- Form approx. 2 tablespoon sized balls and insert a feta cube or 2 inside. You want the feta to be encompassed inside the meatball.
- You can either choose to fry, air fry, or cook the meatballs. I chose to bake them.
- If you are baking them, put them on a baking sheet and cook 25-30 minutes. Feel free to cut one open to see if cooked all the way through.
- While meatballs are cooking combine all the ingredients for the lemon-yogurt sauce (the last 3 ingredients after the break).
- Serve with rice or potatoes and enjoy
