Recipe: Goat Cheese Pasta

Ingredients:
1 box of farfalle pasta
3 tablespoons olive oil
6oz of goat cheese at room temperature
1/2 cup of half and half
1 teaspoon garlic
3 tablespoons parsley
3 tablespoons lemon juice
Grated percorino romano cheese
Salt and pepper to taste
Directions:
- Cook pasta according to the package and your liking. Reserve 1 cup of the pasta water.
- While the pasta is cooking, add olive oil to large saucepan and heat over medium heat. Add the garlic and saute for about two minutes.
- Add the half and half and stir in the goat cheese until soft. Season with salt and pepper.
- Add lemon juice and the reserved pasta water until all combined. Add in the parsley (I do a little oregano too).
- Transfer the drained pasta into the saucepan and cook until the sauce starts to thicken about 2 minutes.
- Grate the pecorino romano and serve!
