Enchilada Dip

Recipe: Enchilada Dip

Serves: 6 people 

Prep Time: 5 minutes 

Total Time: 15 minutes 

Oven Temperature: 400 degrees F 

Ingredients: 

1lb of ground beef
1 cup of corn 
1 & 1/2 cup enchilada sauce 
1 cup shredded cheddar cheese 
1 cup shredded Monterey jack cheese
1 can green chilies
1 tablespoon olive oil 
Salt and  pepper to taste 

Directions: 

  1. Preheat oven to 400 degrees and  spray two ramekins with non-stick cooking spray. 
  2. Heat olive oil in saucepan over medium heat and  add ground beef and  cook until brown. Drain the fat. 
  3.  In the same saucepan add the enchilada sauce, corn, chilies, 1/2 the cheddar cheese, and  1/2 the Monterey jack cheese. Season with the salt and  pepper. 
  4. Divide the filling from the saucepan into the ramekins and  top with the remaining cheeses. 
  5. Place in oven and  bake for 5 minutes. Remove and  let cool for 5 minutes. Serve with tortilla chips.
