Recipe: Enchilada Dip

Oven Temperature: 400 degrees F
Ingredients:
1lb of ground beef
1 cup of corn
1 & 1/2 cup enchilada sauce
1 cup shredded cheddar cheese
1 cup shredded Monterey jack cheese
1 can green chilies
1 tablespoon olive oil
Salt and pepper to taste
Directions:
- Preheat oven to 400 degrees and spray two ramekins with non-stick cooking spray.
- Heat olive oil in saucepan over medium heat and add ground beef and cook until brown. Drain the fat.
- In the same saucepan add the enchilada sauce, corn, chilies, 1/2 the cheddar cheese, and 1/2 the Monterey jack cheese. Season with the salt and pepper.
- Divide the filling from the saucepan into the ramekins and top with the remaining cheeses.
- Place in oven and bake for 5 minutes. Remove and let cool for 5 minutes. Serve with tortilla chips.
